Palm Pasta Pesto
Rinsed hearts-of-palm strands tossed with basil pesto and cherry tomatoes.

Blend basil, pine nuts, garlic, cheese, and olive oil into a bright pesto. Season with salt, pepper, and lemon if using.

Boil a large pot of salted water. Cook hearts of palm noodles until al dente, about 2 minutes. Reserve 1 cup pasta water.

Toss drained pasta with pesto, loosening with pasta water until glossy and clinging.

Tips
- Toast pine nuts gently—burnt nuts turn bitter.
