Stuffed Spaghetti Squash Boats
Baked halves filled with meat sauce or vegetables and cheese.

Halve squash, scoop seeds, oil and season. Roast cut-side down at 200°C / 400°F until tender, 35–45 minutes.

Scrape strands with a fork. Toss with sauce/toppings (marinara, Alfredo, garlic-Parmesan, or taco fillings). For boats, fill the shells and broil briefly.

Tips
- Roast until strands pull easily—undercooked squash is watery and tough.
- Salt the strands and rest in a colander if they seem wet.
