   Brown pork with ya cai until crisp-edged (or skip for vegetarian and bloom chili oil with ya cai).

   Whisk sesame paste, soy, vinegar, chili oil, garlic, and Sichuan pepper with hot water into a sauce.

   Cook fresh wheat noodles; drain into bowls over sauce. Top with pork, peanuts, and green onion. Toss at the table.
