While coastal Asia has eaten seaweed for millennia, kelp noodles are a relatively modern product developed as a low-calorie, mineral-dense noodle alternative. They gained traction in the 2000s with raw, paleo, and keto diets thanks to minimal processing, low carbs, and the natural mineral profile of brown seaweed.
Kelp noodles combine kelp, sodium alginate from brown seaweed, and water. They are purchased ready-made and softened at home.
